Carne Adovada


Ingredients:

3 cups red chile (I make mine from scratch using chile pods, that recipe for another blog)
1 pork roast (I make large portions for a large family so I use 4-6 lbs)

Place pork roast (fat side up) in the crock pot, cover in red chile and season with salt & pepper. Cover and cook on low for 8 hours. (The fat will add flavor to the meat, but will fall off and can be removed prior to eating.)

Serve with fried potatoes and a tortilla.

Mini Cheesecakes


This recipe is so easy & fun for the kids.

Ingredients;
12 Keebler ready made graham cracker pie crusts
1- 8 oz package of cream cheese
2/3 cup powdered sugar
2 cans topping flavor of your choice: apple, blueberry, cherry, strawberry

Blend the powdered sugar & cream cheese until smooth. Spoon one teaspoon into each pie crust, top with one table spoon of topping. Cool for 30 minutes in the fridge.

Serve & enjoy!
