Easy Chocolate Lover's Cheesecake

Ingredients:
3 packages (8 oz) cream cheese, softened
3/4 cup sugar
3 eggs
1 tsp vanilla
1 1/2 cups mini semi-sweet chocolate chips
1 prepackaged graham cracker crust


Beat cream cheese and sugar, add eggs and vanilla. Stir in chocolate chips. Pour into crust.
Bake 10 minutes at 450 degrees. Without opening the oven door, reduce head to 360 degrees. Continue baking for 30 minutes or until set. Cool completely on a wire rack. Cover, refrigerate until chilled.

Serve and enjoy!

Red Beans and Rice with Smoked Sausage

Ingredients:
1 bunch of green onions, chopped
1 c. white rice (non-instant)
1/4 stick of margarine
1/2 lb fully cooked-smoked link sausage (like a Kielbasa)
1 can dark red kidney beans
1 tsp garlic powder
1 tsp pepper
1/2 tsp salt

Cook rice according to package directions, but add 1/4 cup more water, 1/2 tsp salt, 1/4 stick margarine, 1 can of kidney beans and most of the chopped green onions.

Slice sausage into 1/4" slices, then cut in half. Add sausage to rice once cooked.

Polynesian Pork & Rice

Ingredients:
1 lb pork tenderloin, cut into bite sized cubes
1 (20 oz) can of pineapple chunks
1 chopped green bell pepper
2 tsp soy sauce
2 Tb white wine vinegar

Brown pork chopped in a sprayed skillet. Add remaining ingredients. Cover & simmer for 45 minutes. Uncover, stir and simmer 15 more minutes. Serve over rice. White & brown rice are good, but try jasmine rice for a different flavor.

Coca-Cola Pork Chops

Ingredients:
8 pork chops (your choice on bone in)
salt & pepper
1 c BBQ sauce
1 c Coca Cola
1/4 cup brown sugar

Place pork chops in a greased baking dish and sprinkle with salt & pepper. Mix BBQ sauce, Coca-Cola and brown sugar in a separate bowl. Pour over pork chops. Bake uncovered for 1 hour at 350 degrees.

Shrimp Scampi with Pasta

Ingredients:
1 stick of margarine
6 green onions, chopped
1 TB fresh garlic
2 TB fresh parsley
1/4 tsp salt
1/2 tsp coarse ground pepper
1 TB lemon juice
1/4 cup white wine (optional)
1 lb. uncooked peeled shrimp

Melt margarine in a large skillet. Add onion, garlic, parsley, salt & pepper. Cook for 2 minutes on low heat. Add shrimp and cook for an additional 5 minutes. Add lemon juice and wine. Serve over pasta.

Chicken Parmesan

Ingredients:
4 boneless, skinless chicken breasts
1 egg, beaten
1/2 c. bread crumbs
1 TB oil
2 c. pasta sauce (approximately 1 jar if you don't make it from scratch)
4 slices of Mozzarella cheese

Directions:
Pound chicken until very thin and almost double in size. Dip into beat egg and press into the bread crumbs on both sides. Saute chicken in a frying pan for 3 minutes on each side or until lightly golden brown and no longer runs pink. Top with sauce and cheese and broil until cheese starts to bubble. You can serve over any type of pasta. For a low carb version, serve with a size of steamed zucchini and a salad.

I cook for 9 people almost daily. I make weekly trips (every Friday) to the grocery store (Albertson's), the Walmart Market and Sam's Club. I want to get the best quality food for the value of my money. I don't usually bother looking at the ads or clip coupons because I know where to get the best deals. I buy large portions. As you can see, sometimes I run out of room! I keep my green chile and all of my meats (ground beef, turkey, pork, roasts, steak, burgers, shrimp, fish etc.) in a chest freezer in the garage. I buy 2+ pounds on every trip, then I cut them down into smaller portions (approximately 1 lb) and repackage them in quart size Ziplock freezer bags. I spend too much money to have my food spoil.
