
Ingredients:
3 cups red chile (I make mine from scratch using chile pods, that recipe for another blog)
1 pork roast (I make large portions for a large family so I use 4-6 lbs)
Place pork roast (fat side up) in the crock pot, cover in red chile and season with salt & pepper. Cover and cook on low for 8 hours. (The fat will add flavor to the meat, but will fall off and can be removed prior to eating.)
Serve with fried potatoes and a tortilla.
